Week Twenty-Five: Nici's Delicious Chilli Prawn Pasta
Looking for a dish that's simple to make, but packed full of flavour? Nici has the perfect recipe - particularly if you're cooking for one!
Chilli Prawn Pasta!
Do you have a dish that is a bit of a go-to when you’re hungry, need something whipped up fast and you want it to deliver max flavour? I do and this is it! It’s full of ping from the chilli and zing from the lemon and I always use Aussie prawns as they’re sweet plump and juicy!
Spaghetti cooked in plenty of salted water
1 tbsp butter
1 tbsp oil
1 clove garlic, sliced
6-12 raw prawns
Splash of white wine
Salt to season
Parmesan cheese – optional
1. Melt butter and oil in a pan until it sizzles. Add garlic and chilli then prawns to the pan and cook until prawns are pink and cooked through. Splash in the wine, let it sizzle, then tumble in cooked spaghetti. Toss to coat.
2. Transfer to your serving bowl, season with ample salt, a decent squeeze of lemon juice and, if you like to break the rules (Italians rarely combine seafood and cheese), grate over some Parmesan cheese. EAT!
